What is Sous Vide Cooking?
Turns out, this French technique is simpler than you think.
So, what’s sous vide cooking?
Sous vide includes any kind of cooking that occurs in a temperature controlled water bath.
What does this mean? As per its name, sous vide cooking entails that food is placed in vacuum-sealed bags before being submerged in water that’s at a specific and consistent temperature. We’ve asked one of our expert talented makers, Charlie, Founder and Director of Sou-Chef, to explain sous vide cooking for us in simple terms, as he personally assembles ready to cook meals using the sous vide method.
Why do you use sous vide cooking?
“Sous Vide cooking is the process of using vacuum packed bags to slowly cook ingredients in a precise temperature-controlled water bath. This water-based cooking technique retains the juices and aroma of the food that is usually lost during the traditional cooking process and allows you to quickly reheat and produce consistent restaurant quality food.”
Sous vide cooking meat means that very little, if any, fat is added into the sealed bags and so the meat cooks in its own juices, leaving the food moist, juicy and tender.
Charlie’s inspiration was to provide restaurant quality precooked meal kits and deliver them directly to people's homes across the UK. He aimed to create meal kits that are simple to cook at home using step-by-step, easy instructions, hence why everything is cooked and prepared sous vide.
The Sunday Roast box, one of his best-sellers, is a clear indication of Sou-Chef’s excellent sous vide preparation skills. The Sunday roast boxes arrive chilled and are delivered nationwide on a day of your choosing and all contents are cooked using the sous vide cooking process.
“Why spend hours on end peeling the potatoes, slicing the carrots, or stressing over making sure the roasting joint doesn’t dry out. Let us pre-cook the roast for you.” Don’t mind if we do, Charlie!
Charlie’s expert team of chefs do all the long yard work in preparing, marinating, and cooking everything for the lucky recipient. All the recipient needs to do is simply preheat the oven and cook a full Sunday Roast in just 30 minutes, following the simple step-by-step recipe cards provided along with the meal box.
Sou-Chef’s popular Beef Sunday Roast box includes your roasting joint and crispy roast potatoes, homemade Yorkshire puddings, creamy cauliflower cheese, buttery honey roast vegetables and a tangy pickled red cabbage, all liberally doused with a rich red wine gravy. If that does not sound enticing enough, you can always choose from their wide range of options from Hickory Smoked BBQ Ribs (um, yum) or a Beef Sirloin Sunday Roast to spice things up, to Tandoori Chicken Legs or Italian Meatballs in a rich tomato sauce.
